Rocket – Cellini Evoluzione (V2 Heat-Exchange Boiler)

Cellini: This model is identical its counterpart the Giotto Evoluzione in terms of functionality and internal components. The only differences are aesthetic and external, with the Cellino having (arguably) a more conventional and utilitarian design, lacking the angled ‘wing’ side panels of the Giotto and having the standard gauge designs (see photo). 

Preference for the Giotto or Cellini is entirely subjective, as they function exactly the same, although the Giotto has arguably a more ‘unique’ and stylish design. Due to extra stainless steel materials required for its design, the price of the Giotto is also marginally higher than the Cellini.

Product Summary:

The latest (V2) version of the Evoluzione, Rocket’s flagship model intended for home use, is one of the strongest performing competitors in its class. Unlike the larger and higher priced Rocket R 58 (dual boiler) model, all permutations of the Evoluzione model have heat-exchange (HX) boilers. While HX models generally require more skill to use, they have the advantage of being less costly (due to fewer parts) and with practice can still make espressos of the equal (or in the hands of a skilled barista, possibly better) quality espresso shots.

Like all other Rocket models, the Evoluzione is hand-crafted in Milan, Italy. Rocket prides itself on using commercial-grade components – you will not find them cutting corners or using any cheap plastic parts. Highlights include the acclaimed E-61 brew group, a strong (yet quiet) rotary pump, and a powerful steam boiler attached to a no-burn steam wand. This is very solid machine overall, and built to last. More importantly, it consistently produces superb espresso shots.
