Unlike a conventional planetary mixer, the 2500/S90 uses a dedicated spiral mixing system in which the spiral and rotating bowl work together for efficient dough development.
The 2500 Series features an electronic control panel, double motor system and reverse rotation, providing greater control during the mixing process.
Ideal for pizzerias, artisan bakeries, commercial bakeries, restaurants, commissary kitchens, pastry operations and commercial dough production.

IGF notes that the kilogram figure represents maximum bowl capacity and recommends not exceeding approximately three-quarters of maximum capacity for the most homogeneous dough development.

Dual Motor System
The 2500 Series uses separate motors for the bowl and spiral, providing greater control over the relationship between bowl rotation and spiral action.
The reverse-rotation capability further assists with dough collection and ingredient incorporation. IGF identifies the 2500 specifically as a fixed-head spiral kneading machine with electronic control panel, double motor and reverse rotation.

IGF's design uses a rectangular-section dough cutter and a spiral shaped to follow the bowl profile, with the bowl, spiral and cutter proportioned to provide effective dough preparation even with smaller quantities.
Designed to Minimize Dough Heating
IGF engineers the relationship between the bowl and spiral speeds to provide effective dough development while helping control temperature rise during mixing—an important consideration in professional pizza and bread production.
60 Hz Electrical Configuration
CaffeTech supplies this model in a 60 Hz configuration for the Canadian market.
Because the IGF factory literature shows the standard European configuration at 400V / 50 Hz, the exact 60 Hz voltage and electrical configuration must be confirmed at the time of order. IGF specifically notes that voltage variations can be supplied on request.
Final voltage, phase and electrical connection requirements must be confirmed by CaffeTech prior to ordering and installation.
